Bean and Barley Greek Salad

1 cup pearl barley, cooked and cooled
2 – 19 oz can mixed beans, drained and rinsed
2 cups cucumber, chopped
2 cups bell pepper (any colour) diced
1 cup red onion, diced
1 cup Kalamata olives
1 cup feta cheese, chopped
Add fresh ground pepper to taste

Dressing: 6 tbsp olive oil, ½ cup lemon juice, ½ cup chopped fresh parsley, 2 tbsp dried oregano

Add dressing ingredients (olive oil, lemon juice and oregano) into a small bowl and whisk together. Add all other ingredients into a large bowl. Cover with dressing and toss to combine. Chill until ready to serve. Serve with freshly ground pepper to taste.
